I had to put this thread in, I love hearing new ideas for recipes. I wish I could assess the old forums just for a day to copy and paste the recipes we had collected. Oh well, we will just have to build them up again.

Had leftover bolognaise and made a bolognaise tortilla stack …. and they all ate it without complaint!!!!!!!!!!!
Bolognaise Tortilla Stack
- Round baking dish, spray oil to grease.
- Layer tortilla, mince, a small sprinkle of cheese, c. 1 tbsp or so sour cream repeat.
- Top thin spread sour cream and cheese.
Now, I was sneaky and did a "smug" dinner.
To the bolognaise sauce, I added a small tin of baked beans, mashed with a fork, so no-one could see the beans.
I grated and cooked for 2 mins in the microwave 1 carrot and 1 zucchini and mixed it with the sour cream before layering.
This worked a treat - made more sauce and snuck those veges in.
Baked for 40 mins in moderate oven. Keep checking top for browning and cover with foil if needed. I ended up finishing with 5 mins fan forced because it hadn't browned enough.

Dukan Oat Bran Porridge
1.5 - 2tbsp oatbran drop or 2 of vanilla milk sweetener
Put oat bran, vanilla & sweetener in a microwave safe bowl, add enough milk to cover. Microwave on high for 30 seconds to 1 minute, stir. (you may need to watch it doesn't boil over) Add a splash more milk if needed/prefered, microwave another 30 seconds to 1 minute, stir again.
(I work on roughly 1 minute of cooking per tablespoon for a 1100 watt microwave)
Allow to cool a little, enjoy.

Dukan Microwave Bread
4 tbsp oat bran (this will be enough for 2 days) 1 tsp baking powder 2 tbsp fat free Greek or Natural yogurt 2 whole eggs
Beat the eggs & yogurt with a fork in a microwave safe shallow bowl or container. (this will be the shape & size of your bread when it's cooked) Add the oat bran & baking powder & mix through. Let it sit for about 20 minutes. Microwave on high for about 2-5 minutes, depending on the thickness of your mixture & the power of the microwave. (It should have risen slightly, & be a little moist & springy to the touch. Mine works on about 2.5 minutes in an 1100 watt microwave) Once cooked, remove it from the bowl & let it cool on a rack or plate. Slice in half & toast one slice, saving the 2nd slice for the next day wrapped up in the fridge. (or halve the recipe for 1 fresh slice)
This is yummy topped with a fried egg, vegemite, cut into soldiers for dipping into a boiled egg or for an egg & bacon sandwich or any kind of burger. You can also add herbs to the mixture for different flavours.
*this only makes 2 slices, it's not a loaf by any means but fast & easy.

Dukan Friendly Curried Beef Curried Sauce - Could be used for any meat.
1 teaspoon Chicken stock (salt reduced) 1/2 cup water 1 teaspoon Onion Powder 1 teaspoon Garlic Powder 1 teaspoon Parley Flakes (could also use chives) 1 tablespoon Cornflower
All ingredients into a saucepan, heat through and stir constantly until thickened.
Beef
Coat pan in spray oil and heat till hot I used Sizzle Steak from Woolworths. Place 2 or 3 Sizzle Steaks in pan Begin turning 1st when 3rd is in pan Remove quickly and add to sauce. Also put a little water in pan and added juices to sauce
Dukan Friendly Chicken Soup
Chicken Breast Zucchini Carrot Cauli Broccolini Onion Leek Chicken Stock
Cook until tender and mash with masher.
Chicken and Veg Quiche
Chicken Breast Grated Carrot Grated Zucchini Onion
1 Cup Egg Whites 2 Eggs .5 Cup Skim Milk
Cook Chicken, Onion and Veg, cool slightly, mix egg and milk mix, combine. Cook 180 for about 30mins.
NOTE: PreCook all ingredients or it's too 'wet'.Yoghurt cake - 2 servings (Wanting to try this one)
Preparation time: 15 minutes
Cooking time: 35 minutes
- 4 tbsp oat bran - 5 eggs - 150g fat-free natural (or flavoured) yoghurt - 6 tbsp powdered skimmed milk - 2 tbsp Splenda granules - 1 × 7g sachet dried yeast - Flavouring of your choice (e.g. hazelnut, vanilla, orange flower water)
1 Preheat the oven to 200C/Gas Mark 6 and line a 20cm (8in) loaf tin with greaseproof paper.
2 Process the oat bran as finely as possible using a blender or food processor and then combine with all the other ingredients.

Dukan Friendly Flat Bread/Pocket Bread/Crackers?
2 Tblsp Oat Bran 2 Tblsp Wheat Bran 1 egg 2 Tblsp FF Cottage Cheese OR 2 Tblsp FF Yoghurt (I used Fat Free Natural Yoghurt) ½ tsp Baking Powder Pinch of salt ( I swapped this for Curry Powder, Garlic Powder and Parsley 1 tsp Apple Cider Vinegar - optional ½ tsp Cream of Tartar - optional
Spread onto baking paper and cook in 180 oven for 15 to 20mins (longer = crisper)
If you make a 15cm round it will rise a little and you can carefully cut a pocket in it.
I am also going to make a batch of 'cracker' size ones and leave them in until very crunchy.
Also planning to play with herbs and spices over the next few days and see what I can come up with.

Thanks Elasti, it's been a little trial and error. I made a mug cake and it tasted like clumpy porridge, so not really what I was looking for.
Today I made some Egg Muffins
Dukan Friendly Smoked Salmon Egg Muffins (PP Day) Makes 4-5 small Muffins
1 Egg 1/2 Cup Egg Whites (from a carton in the fridge section of Woolies) 1/2 teaspoon Onion Powder 1/2 teaspoon Dill 50 - 100g Smoked Salmon
Preheat oven to 180.
Spray muffin tin with oil.
Whisk Eggs and Herbs together until well combined. Add Smoked Salmon.
Pour into muffin tin and cook until golden and a skewer comes out clean. (to be honest I didn't time them and it will depend on how big the muffin holes are. They rise really well, but drop pretty quick.
I also made a Bacon version. Swap Bacon for Smoked Salmon, swap Dill with Parsley.
Could easily be modified to PV Day by adding cooked Mushroom, Onion and Spinach. Or of course any alternatives you like. I found cooking 1st stopped them being too runny/juicy/

Chocolate Mug Cake 2 tablespoons oat bran 2 tablespoons skimmed milk powder ½ tablespoon low fat cocoa powder 1 teaspoon Baking Powder Sweetener to taste 1 egg 3-4 tablespoons skimmed milk
In a 2 cup (500 ml) Pyrex jug: Beat the egg and 3Tbsp of milk together Add the Oat Bran, milk powder, cocoa and baking powder, mix very well. It should be quite liquid. If necessary, add another 1Tbsp of milk. Microwave for 3 minutes on high (850W) The mixture will probably rise right to the top of the jug, and then settle down at the 1½ cup (375ml) mark
NOTE: 1 tsp of cocoa is a tolerated food
make 2 quick slices of "bread" using this recipe, leaving out the sweetener and cocoa : Add 1 tsp of vinegar and half tsp of cream of tartar Microwave in a long thin container for 3 mins Cut the long thin result in two and toast the "bread" slices for a sandwich (I also put in a drop of gravy browning for the appearance)

For Elasti and anyone else who wants it:
Recipe in red… My comments in pink
Microwave roast lamb (yes - it is yummy)
1.4kg leg of lamb seeded mustard rosemary (often used dried if I don't have fresh - if fresh, I dice it)
Place lamb fat side up on rack (I use a corning ware dish and either an onion split in half for a 'rack' or upside down saucer) in a 3 litre dish.
Brush with seeded mustard (I use master foods and the back of a teaspoon) Sprinkle with rosemary. I cover firmly with baking paper.
Cook on medium-high (1000W microwave, power 7) for 30 to 35 mins, turning half way.
I do 15mins, then 20 mins. (I remove the hock at 15 mins if it's a hock end roast)
Rest for 15 mins before carving. (I cover with lid or alfoil and thick t-towels to keep warm while resting).
Generally it's cooked beautifully, but can be zapped if people like it a little more well done.

SLOW COOKER SALSA CHICKEN
1kg boneless, skinless chicken breasts 1 cup salsa 1 cup diced canned tomatoes (low salt) 2 tbsp taco seasoning 1 cup onions, finely diced 1/2 cup celery, finely diced 1/2 cup carrots, grated 3 tbsp sour cream, reduced fat
Directions: Place chicken in slow cooker. Sprinkle the taco seasoning over the meat then layer the vegetables and salsa on top. Pour a half a cup of water over the mixture. Set on LOW and cook for 4-6hrs. The meat is cooked when it shreds. When ready to serve break up the chicken with two forks then stir in the sour cream.
Optional top with chopped shallots and or melted cheese and a dob of sour cream
Could be used as Taco filling, Nacho's, Enchilada filling or even over steamed Jacket Potatoes....YUM!!!!!
